Roast the ear(s) of corn or use the easier and just-as-tasty microwave method outlined in earlier postings. Lightly coat ear(s) with mayonnaise instead of butter. Dust with Cotija cheese and smoked paprika. If you're out of Cotija, substitute freshly grated parmesan; if you're out of smoked paprika, substitute regular powdered paprika. Serve as an appetizer or a side dish.
