Three years ago, our Culinary Arts Department (CAD) published its till-then secret remedy for cooking a delicious brisket. Our Brisket Economics Group (BEG) now wishes to disclose the economics of brisket. If you buy the brisket at a quality meat store or meat department in an upscale grocery, or even at a grocery such as Fry's or Safeway, you're going to pay a fortune. I beg to tell you it's not worth it. But, if you buy it at Costco, not only will get an excellent brisket, it will turn out to be a bargain on a per-meal-cost basis beyond your wildest dreams (providing meals at an actual cost of a couple of dollars each). So, be sure to buy at least a 6 lb brisket. You won't regret it.
